Egg and Potato Dry Curry


Egg and Potato dry curry is a very delicious yummy preparation which even kids can enjoy. Many times kids want to have hot spicy curries but unable to handle the heat and end up with teary eyes. This one can be the best for them as it’s look hot and spicy though it’s more sweet and tangy. Grown up also can enjoy this curry and add on heat munching those curry fried green chilies. This is a simple curry with a twist . This is easy quick fix and yummy side dish for all. Give it a try and let me know how you like it.

 
Preparation time :  10 minutes
Cooking time : 15 minutes
Serves : 4 

Ingredients : 
4 eggs boiled 
2 potatoes  cubes 
2  onion  chopped 
6  garlic cloves 
½  tsp ginger 
2 big tomatoes
4 whole green chilly (optional)
½  tsp red chilly powder 
½  tsp Kashmiri red chilly powder
½  tsp turmeric powder 
1/8 tsp sugar 
1 cup rice starch ( cooked rice drained water)
¼  tsp gram masala powder 
¼  tsp ghee (clarified butter)
½  cup oil
Salt  to taste


Methods  Of Cooking : 
We usually throw away the cooked rice water but the starch is rich in health and can give delicious touch to your curry. Today I am using that cooked rice water for this curry.Use cooked rice water without a second thought given and see your curry turns magically tasty. Make a paste with onion, garlic, ginger and tomatoes. Marinate potato cubes and boiled egg with salt and little turmeric powder. Heat oil and fry the boiled eggs a little and keep aside. Fry the potato cubes well till brown . Keep aside. Heat oil in another pan. Now add the onion tomato paste, salt and sugar . Saute till oil comes out. Now add fried potatoes and eggs, mix well with the masala. Now add I cup warm cooked rice water and green chilly if using ( this is not to add heat to the gravy but while eating if someone want’s a little heat they can munch this green chilly to add on). Let it come to boil. When the gravy is almost dry then ad garam masala powder and ghee. Mix well. Relish this yummy delicious egg potato dry curry with steamed rice or paratha, naan, or simple roti chapathi or even with breads.
